Turkey Bacon Wrapped Dates Stuffed with Goat Cheese Recipe

4 oz package goat cheese

12 oz package turkey bacon

1 lb medjool dates

 

1. Split the top of the dates lengthwise to remove the pits and to create a pocket to stuff goat cheese into. Do not cut completely though the dates.

2. Using a butter knife, stuff goat cheese into the hollow dates. Pinch the dates closed again once filled.

3. Cut the slices of turkey bacon in half so they are not as long. Wrap the pieces of bacon around the dates and secure by putting a toothpick through the loose end of the bacon and all the way through the date.

4. Place on a cookie sheet and bake at 375 degrees for 40 minutes, turning the dates over halfway through the cooking time. The sugar in the dates will darken and congeal to the sheet a bit, so flip and remove carefully.
